This is a great fall recipe, and one of my favorites. I like to serve this as a light dinner with some homemade vegetable soup. Or pack it as a healthy lunch for work throughout the week. Or you could even bring it to a fall themed potluck dinner. It is super fresh, tangy and crunchy, with a lot of bold flavors that keep you coming back for more.
It’s a great way to use chicken breasts that you’ve precooked in your Sunday meal prep sessions. These were baked, by the way. Also, since the chicken is cooked ahead of time, it comes together in less than ten minutes.
Above all, it’s really healthy. There’s plenty of protein from the chicken. The almonds, broccoli slaw, carrots, and apples are extremely healthy as well.
I used the light balsamic vinaigrette to make it easy, but if you’d rather take some balsamic vinegar and a little extra virgin olive oil and whisk it with some salt, pepper, and lemon juice that would work as well.
If you are not a fan of blue cheese, try feta. If you aren’t a fan of the crumbly cheeses at all try some finely cubed Swiss or Gruyere. Or just leave the cheese out. Especially if you don’t do dairy. It will still be really yummy without it. I just love the combo of cheese and apples, but that’s me.
Assemble the following ingredients:
Chopped Chicken, Apple, and Almond Slaw
16 ounces broccoli slaw
1 cup shredded carrots
1/3 large red onion
2 cooked chicken breasts
1/2 cup sliced almonds
1/2 cup crumbled blue cheese
1 chopped Gala or Fuji apple
1/2 cup reduced sugar, dried cranberries
1/2 cup light balsamic vinaigrette
Slice the chicken breast and then dice the slices into chunks. Chop the onion.
Add the broccoli slaw and and the carrots to a large salad bowl.
Add the other salad ingredients and toss well with the dressing.
I add the apple last so it doesn’t turn brown. The acid in the dressing will mostly prevent this, but I still add it last. You can do two apples if you want to, also.
Once everything has been stirred together, either refrigerate for a while or serve right away. It does keep really well for leftovers, too! I kept thinking abut the fact that it was in the fridge though, so it didn’t last that long!
Top with a little more blue cheese or almond slices if you like.
